Preparation of Sampa

Washing and Centrifuging

Firstly, for the correct preparation of the Sampa, we wash all the ingredients separately, as well as the drying process.

 

Roasting

Secondly, we roast all of Sampa’s ingredients separately, as each has its own specific roasting degree.

 

Grinding

We grind the ingredients separately, as each one has its specific degree of hardness.

 

Mixing

After we have milled all the grains and the plantain, we put all the flours together.
As a result, and depending on the quantity, we place them in one, two or more containers.

The containers should not be made of metal but of plastic, taking care that the mixture is as uniform as possible. for instance.

 

Dough

When all the flours are well blended, we mix little by little with the honey.

However, we must knead the whole mixture until the desired consistency is obtained, being careful not to leave little balls of flour without honey.

 

Balls

As soon as all the dough is ready, well kneaded and mixed, neither too dry nor too soggy, we make with our own hands, small balls the size of a ping pong ball.

 

Drying

The finished balls are left to dry in a suitable place. We must be careful to cover them to prevent insects from coming in contact with the preparation.

With good drying, Sampa balls reach a consistency that is not too hard, with a certain degree of malleability without being too sticky.

 

Conservation of Sampa preparation

Because we prepare our Sampa so well, it can be kept perfectly edible for no less than 5 to 7 years, reaching a shelf life of 10 years.

Sampa is a highly energetic food.

The consumption of one Sampa balls is equivalent to one of the three main meals that we normally consume in a day.
